For PVP it's not quite as simple as 2 trinkets which are always BIS.
If you want damage just go with the same as PVE.
If you want more mana regen you can go with http://wotlk.openwow.com/item=54588 + http://wotlk.openwow.com/item=47059
If you want some burst healing switch one out with http://wotlk.openwow.com/item=50726.
If you want to go really defensive (mostly for dueling certain classes) then you can go with http://wotlk.openwow.com/item=50726 + http://wotlk.openwow.com/item=50356.
