In the shop there's an option to re-customize my character for 10 coins in which I know i'll be able to swap my gender, what I wonder is if I am to buy a race change for 30 points instead will I be able to change my male human to a female human?

yes, race and faction change allow to change gender too
Anyway "race change" is 20 Points, not 30.
"faction change" is 30 Points
Will it also allow me to stay human or will I have to change the race aswell
if you pick "race change" you are obligated to change race, you can not remain human.
