If you aim for PVE
I would say
Deadly Boss Modes (DBM) is the only must have!
Then you should have some sort of Raidframe addon.
People use
Grid
Grid2
Vuhdo
I prefer Grid + Wotlkraiddebuffs pack
IF you going to roll Paladin, you need Pallypower for sorting out buffs!
Alot of classes have specific addons to help with rotation, cd´s etc but i wouden´t say it´s a must have but sure makes the game easier.
CLcret for rets
Badkitty for cat´s
Clcdk for dks
Magenuggets for mages
etc etc
