I think I've been steered wrong as a new player. Wondering if I can get support.

A fella guided me to unlearn my professions to pick up new ones and told me it would allow me to do "multiple professions" but now i've learned it just got rid of all my experience for that profession. I am new to the game. Is there any way you can help me restore my two professions now that i've learned that it is not possible to do more than two.

You can't restore them. You can only learn them at the trainers and level them again.
