Can someone help me out and give me a good spec or link me to a guide I can use to both level as DK but also have it be viable for tanking in RDF as I level? I'm assuming some kind of blood dk hybrid is the answer but if you can help out with a specific spec I'd appreciate it.

Straightforward Unholy PvE and PvP specs are THE BEST WAY to level.
You dont need to have some kind of tanking talents or extra heal from Blood tree, NOT A SINGLE MOB will be able to kill you if you go in Frost Presence and spam Death Strike when you can (while diseases on target) while being Unholy.
You can tank anything from lvl 60 - 79 just by going Frost Presence.
IT > PS > Pesti > DND > win. Be top DPS in the dungeon and tank it just as well.
DK is the most OP class for leveling, just get something like:

The only thing that can kill you while leveling is another player, and Unholy works best there aswell.
No, you dont need Glyphs, but if you can afford them, Glyph of Disease is a great investment. After that Glyph of the Ghoul and Glyph of Death and Decay can be great choices. Minor just go for Raise Dead so you dont have to worry about mats i guess...

You would ask "why you grip mobs and not just walk to them ?
1/ AoE. You grip that far-away-mob and AoE.
2/ Sometimes you don't wanna aggro extra mobs and waste time killing them. Grip the one you need.
3/ This is great vs caster. It works an interrupt.
4/ Chain Death Grips feels good.
