Well, i went for engineering cuz the goggles have pretty sick stats and imo rogues should be engineers cuz of all the tools the profession provides.
If you want to have fun, roll any damn profession you want. But if your concerned with playing the cookie cutter builds then Engineering is a must, followed by JC/Enchanting for the unique stat bonuses. You could also do LW for drums and such when you want to PvE (or if you want to be a boss and burn drums in BGs too).
But I say do what you want and have fun. Hell, roll tailoring and confuse people with tiny nets. The tiny net is a death sentence. It's a net, and it's tiny.
ive considered keeping mining as my second and first aid so ive only got space for 1 profession , so out of engineering / jwc / enchanting what is the best out of those 3 and if there's any warmane's guide to it
PVE
+Enchanting -> ring enchants -> drop enchanting
LW (Drums + Chest)
JWC (Choker + Bonus Gems)
PVP
+Enchanting -> ring enchants -> drop enchanting
+JWC (Choker + Bonus Gems + Stealth Trinket)
+Engineering (Goggles Stealth detection, other fun misc stuff on bg)
But if you decide to do both, id go LW/JWC.
