how can i try to evaluate their price?
Go to AH, check the item set. E.g. if you have Adept's Robes of the Wolf, you can search for Armor -> Adept's ,and see what comes up. Nothing? Wait till some appears, or post with random price like 1K gold. Didn't sell? Try again, or lower the price a bit.
Some items are more common than others, and some are more desired. There are a lot of sets, but not all sets are interesting/wanted/sought after, or not all set pieces are desired.
The prices can go from 250g to several thousands, it all depends on market.
