Paladins, Bears, DKs are all perfectly fine for cutting edge lk and halion 25hc (whenever you get there).
(personal opinion follows) Server seems to have a large amount of paladin and dk tanks, but...
One thing to add is grind reputation with different Northerend Factions, those can give you nice rewards as well once you get to honored / revered / exalted depending on faction.
