I tried doing Gnomeregan today to farm Thermaplugg for the pet schematics and wouldn't you know it, the door to his chamber doesn't open! I saw the robot pet on sale on the AH now and then, and just after the dungeon's release! Not before, never. So how can that be explained?

Gnomeregan entrance to Thermasplugg doesn't work. Heroic Gonmeregan doesn't work

Use blink, displacer beast, shadowstep or Sandbox tiger to bypass the door.
Also, heroic gnomeregan does not exist.

No.
Even on Legion Gnome is still the oldest outdated dungeon it has been since vanilla.
SFK got reworked in Cata
SM got reworked in MOP
RFC got reworked in WOD

Actually there is 5 man boss in Legion in Gnomeregan that was added in patch 7.1
