Well it is common practice for a rogue to switch your offhand weapon in different combat situations, one of the many is to switch offhand to a weapon with instant poison when you go full on burst mode. Switching your main hand isn't something I would do though, wounding poison does damage on its own and is too valuable to lose from the target.
Try it in pve and u will know the answer. In short, no it's terrible better go for wound/insta due to how poison application works double instant wont be as effective.
Having double instant poison isn't worth losing the healing reduction and control from wound and crippling poison in PvP.
Since you're a sub rogue you should be using a fast off hand 1 handed weapon to maximize your 'passive' applications of crippling poison. Crippling poison is a simple chance on hit application which benefits from faster attacks while instant poison has a limitation in the form of being PPM (procs per minute) based. PPM poisons use a different way of calculating proc chance that ensures that every weapon has the same amount of poison DPS caused by melee swings regardless of speed. It's important to note that the PPM proc chance is also used by special attacks and not just melee swings. This means that a PPM poison will actually proc more on a slow main hand weapon because it is the main source of your special attacks (back stab) and is using a 'higher' proc chance in order to match a faster weapon. Instant poison on your offhand will be left 'gimped' with PPM limitations and no constant special attack source.
