I see lots of "lists" of BiS gear, but if you are spell-hit capped and pushing 600+spell dmg, is that not enough for karazhan?

This is more than enough for karazhan, even in harder state than we have here.
I could hit you with a number like "with that gear you shouldn't drop below 700 dps or you're doing something wrong", but it depends on fight, on some you will do more, on some less.
