Which proffesions should i pick up while leveling?

Could be mostly everything, but the common ones are Herba-alche/Skin-lw/Mining-eng or jwl

Have in mind that in a server x5 every profession is hard to level while leveling, so i would recommend doing in it later.

depends what spec u aim for at the end

if u want to do resto PVE at the end then first pick herbalism and another like skinning or mining ( if mining search for macro togggle detect both ore and herb)

keep the herbs you need to powerlevel alchemy later in a bank alt and sell the others to have money for ur skills and leveling
