Yea, people are undercutting. It is a competition. So.. you go AH and undercut the previous dude. Be decent and undercut by 1 silver, don't be "that" guy.
You will sell it, 100%. I never met a guy why has 5000 Berserker enchants and he can't sell them. If you are reeeealy worried about that, make, lets say, 10 enchants. Sold all, good make next batch. Sold only 7? Make another 3 and dump it in. Tough, remember, you could probably sell 11 or more, you just lost gold. If you want everything right tomorrow by noon... it doesn't work like that. Think in, minimum, weeks. Months.
It is 5% tax, you are thinking about Neutral AH.
Edit: basic human trait - if you do something, you will become good at it. Just go and start.

Honestly, I think one of the easiest ways is to have enchanting and tailoring maxed. You can make up to 6k a day just by making and selling frostweave bags, there's a few places in ice crown that you can make a lot of frostweave in hours, or simply buy it for 9g a stack of the AH, and disenchant any green boes from level 65+ to get the infinite dust.

ToC Dailies give you a fair amount of gold to start with, about 80-90g/quest

Gathering will give you a stable income, but if you dont plan to spend hours upon hours for it, you wont get rich.
if you know the tricks, gold will be easy.
1. If you have decent gear, but broke, lead an icc25 with B+P res, I've gotten 100k in a single run once by just being lucky with BoE drops. On average you can get 10k gold per run(once a week per char) if the run is decent, all on you.
2. Flip cosmetic, utility items such as potions, food, low level gear
3. If you have alot of gold, buy out certain items that aren't very popular thats needed to lvlup professions, and put em on sale 2x more expensive, but u have to keep updated and buy out everyone cheaper.

Make a tank class, instant que heroics when your faction has wintergrasp so you get stone keeper shards from killing bosses, turn stone keeper shards in for honor at wintergrasp, buy gems with honor, sell on AH. Take unused triumph emblems , buy crusader orbs, sell. Get rich fast if you're a tank.
