You can't go wrong with Fury Warrior and Fire Mage. These two will always be up there in the charts, provided they're played at least decently.
However it depends a lot on the raid setting, personal class and raid proficiency. Also, certain encounters favor certain classes more than others.
Try to find something you enjoy as a playstyle, as you can practically be the best with every class.

What do you want? A set in stone raid slot or just being on top of dps meters?
Fury and Fire Mage are the ones topping dps meters if geared, but both classes are played a lot.
Support classes like Ele or Boomy have it easier to find a raid spot, not because of good dps, but wide range of support buffs that other dps classes need. Less people play these classes, but every raid want them.

Single target boss fight, top 3 dps are Combat rogue - Fury warrior - Fire mage (arcane can do some serious damage too)
But overall almost all classes can do very similar damage if played right.

Play what you like almost everything is viable on warmane I'm playing survival in icc at the moment and loving it.
