If you want to get right into the action, Frostwolf is instant 80 WotLK.
If you want to boost through levelling and a popular realm, Icecrown would be best with 7x XP rates.
Lordaeron is a blizzlike server, stressing the importance of maintaining that feel of when the expansion was originally released.

Depends what you want. Most people here favour Icecrown which is personally what I'm enjoying.
