Ok here are some classes versus another ones, this is for WOTLK, you can add different spec for the class and write who will win, if both player are in theory equaly skilled:

Equally skilled and geared:
s priest vs mage? = frost mage, also arcane has good chance
s priest vs warlock (add both specs) = warlock, destro and affli
s priest vs hunter = spriest, especially with los
s priest vs shaman = spriest wins over ele, probably lose vs enha but not sure about that

shaman vs mage = frost mage in open,ele shaman with los.
shaman vs hunter = hunter in open, shaman with los
shaman vs warlock = warlock

warlock vs mage = 50-50 if destro vs frost. Fire mage with the right talents and some rng can also win destro lock.
warlock vs hunter = warlock
warlock vs shaman = warlock
warlock vs priest = warlock

Balance druid can possibly win vs hunter and ele, but he wont beat a mage/lock/priest, maybe in open world where he can outrun and outheal till exahustion vs mage and lock.
