So, i'm trying to figure out what gear I want to get before I start doing endgame dungeons.

IE. What are the best, or decent, things I can get from Northrend quests or crafting?

Quests won't offer you much. Reputations might. Rest is EoT, FoS, PoS, ToC5 farm.

Quests:
The Shadow Vault quests in Icecrown.

Reputations:
Ebon Blade/Kirin Tor - Honored - Cloak
Wyrmest Accord - Honored - Belt ; Revered - 1h Mace
Horde Expidition/ Alliance Vanguard - Revered - Shield

ICC recipes:
Legs: Lightning-Infused Leggings or Leggings of Woven Death (both have Haste+Crit).
Feet: Earthsoul Boots (Haste+Crit) or Deathfrost Boots (Crit+Hit).

ToC recipes:
Chest: Merlin's Robe (Haste+Crit).
Wrists: Bejeweled Wizard's Bracers (Haste+Crit).

ICC BoE's:
Legs: Leggings of Dubious Charm (Crit+MP). Cheap alternative to crafting legs.
Belt: Belt of Blood Nova (Haste+ MP5).
Shoulders: Stiffened Corpse Shoulderpads (Spirit+Crit). Better than nothing, nice two yellow sockets for hit, or haste.
