It depends on preference.
Reason being is that in BGs and World PVP, Engineering is a clean winner, whereas if you're more aimed at arenas, you'll want something like Inscription(shoulder enchant) and Jewelcrafting(Gems).
You could also go Tailoring for the cloak enchant which adds an attack power proc of 400.
If you want to be able to do a bit of everything, pick Engineering and Jewelcrafting. You'll have a hard time capping Armor penetration, which is your main stat for damage. Don't try to PVP without 2x T10 DPS and 2x T10 Tank. You'll lack damage if you do.
