So, i have never played WoW before, and i think i could figure out most things by playing or looking up class guides. but i wanted to ask if i should play in the new player server frostmourne or should i go for the more populated server for the proper MMO experince, Icecrown?

Depends from what you want. Lordaeron realm have closest experience to retail WotLK, you will know your class while leveling at x1 speed, yet it have hard raids. Icecrown is most popular and flooded realm, bad choice for novice cuz ppl expect you to know everything about this "10-year old game".
