A skilled Holy Paladin is probably in highest demand for most pug raids and guilds.

As a healer, you will be quite desired regardless of class (so pick the one you feel you are most comfortable with), but be aware that you are also expected to be able to respecc to dps on demand as well during a raid encounter.
