I usually see people with 2h but I have compared the stats of both the sets and 1h+off seems to give more haste and maybe 1 or 2 int as compared to the former. Maybe it gives more of 1 more stat too but forgot now.

People play with the offhand for the 180 Intellect enchant.
It makes it superior.
They bought 2h weps cos they dont know how to play.
Dont trust everyone you inspect around. Same goes for talents
1h+off hand it comes as first from cataclysm expansion. Only you can use 2h if is with high ilvl then 1h+off hand.
I use 2h cuz of better transmogs :P
you can use 1h and still mog it to a staff with the transmog bug, i've seen millions of people running around with 1h+oh transmogged into a staffQuote:
