I saw the new changelog about TBC expansion, I'm playng on Medivh, however..I'm supposed to download the client again or this updates apply themselves on their server core?

The updates are always to the core, since we don't do custom changes to the client. No need to get the client again.
Thank you. One more thing, there are new models for TBC? Like WoD models for Wotlk...
None from us so far, at least.
