So, i have a female Blood Elf Paladin, and i want to change the gender. If i do use RACE CHANGE, will i lose anything in my character (i mean, because only blood elfs can be paladin on horde, it could bug something)?

If you just want a gender change only for Wotlk realms, you need to use Character Recustomization
for your character.
CHARACTER RECUSTOMIZATION
Recustomization costs 10 Coins and provides:
- Character's name, appearance and gender can be recustomized
- Recustomization is completed through the character selection screen in-game
- Recustomization is irreversible and not eligible for refund
