I'm not sure what is needed most since I play on alliance side. But i would guess Lock, Mage, Hunter in that order.
It really doesn't matter all that much. Best bet is to play whatever you're proficient at.
None of those three classes have anything substantial to differentiate them in the eyes of the general public (apart from mage tables or lock summons to TK instances), and you're going to get different answers from different guilds based on what crew they are already running with. If you truly want to fit into a guild, browse the recruitment forum and see what's in demand for that specific guild.
