Is there any way to track both mining and herbalism at the same time?
No, you must choose one or the other.
There are 3rd-party mods that will label both the game map and the mini-map with icons representing potential resource spawn points ("Gatherer" is an example), but you cannot use more than one mini-map tracking ability at a time.
