All classes/specs are viable in TBC, that's why i don't think anyone can say for sure which one is the least played. With Warmane's dual spec option for the TBC realms even less so. However if i had to guess, probably deep demonology warlocks would be the least played. Speaking from a PvE player's perspective, i have no clue what the PvP scene looks like.
From what I experienced in 5mans/10mans you either want to roll a Druid tank / Shaman Heal / Hunter. The 3 classes I pretty much never see in 5mans
