There are not any herbivore playable humanoid species in Warcraft. As for specific characters, it remains an individual's decision to do so just like it is in the real world, since Blizzard generally does not bother covering the diet of lore characters. If you're interested in a race or characters that are super-sensitive to nature and are possibly more likely to have made livelihood decisions such as this, then you may wish to check out the Tauren and the Night Elves.
sadly nothing comes up about herbivore tauren or night elves, and they both eat meat from what i know :( they were my hope too, you'd imagine a night elf might have some doubts about eating an animal.. i guess not xD
