It seems like the guide goes for Holy/Prot talent for raiding

But most people I know and many paladins I’ve inspected, they all go for Holy/Ret talent

Is the 6% healing increase (stack with tree form?) and x2 sacred shield absorb more important than 5% crit?

The 6% doesn't stack. The allure of sub prot is Divine Guardian, raid-wide 20% DR. Sub ret provides extra throughput along with a bit of regen and optionally a nice movement speed boost. Generally for serious raids you'd want to go sub prot.
