I have a level 80 rogue I want to sell to get coins to gear my DK. I do not have another character that is level 55 on my account. So if I sell the rogue, will my DK disappear because you are supposed to have another character 55+ to play a DK?

No don't worry it will not disappear.
Only If you delete it, you may not be able to make a new dk
