What are the best professions to level up with an Affliction Warlock?
With my mage I chose tailoring and enchantment but they never contributed much to facilitating the pve. They didn't make a difference in single combat either...
(im taking in low levels)

I don't think any profession will make a big difference while leveling. Later on only engineering can make a difference in combat cause of the utility (frag belt, boots, parachute), rest all give some bonus stat like JC can have better gems giving you +47 of whichever stat you want over someone with no prof, ench gives you ring enchants for +47 spell power also and so on.
Low levels you can take anything you want, I got engineering on my warlock and it comes in handy in PVP and PVE.
If you're low on gold, you can just take some gathering profs and sell stuff you collect along the way.

You don't have to, but it does help you a lot since you won't have to buy stuff from the AH.
You can do prospecting and get gems from ores, a very cheap way to level up JC.

jc, bs - u can choose stat u need, that is good.
eng - best utility.
tailoring - best burst.

For me i got tailoring and skinning...i gathered a tons of leather and sold them with ease on AH, plus tailoring allowed me to craft armor for my warlock while lvling.
Was thinking that im gonna leave skinning once i reach max lvl but no way im leaving it. You can make decent gold from that proffesion, also herb is good for you as you can collect while lvling. Me personaly, i dont like mining as it makes you move all around the map to search for nodes that are usally so spread out
