So I want to sell my character and I don't know how the economy works on this server.
I was wondering if you guys could tell me how many coins I can ask for it.

When you go to sell the character the price will automatically be adjusted. I can tell you now, your gear, emblems, and honor don't matter at all. People typically buy naked 80's (with BoE's as they don't increase the price) with fast flying, dual spec, two max professions, and some gold for 30 coins.

In that case, pray to sell it for 30 (25 for You, 5 tax). Chances will be not so great, but with lucky, who knows.
