It would fall under exploiting rule considering the original use of the mount is just to fly it to Uzo and turn it in. Doesn't the gryphon have area limitation?

Initially, I was going to say, that if the mount looks like any other, people might not notice it and they could let it slip through. But after checking the quest, I don't remember a purchasable gryphon in the game, that looks exactly like the one from the quest. So, imho many people will notice the unusual mount, some might even become suspicious and file a report.

So, the first half of the first sentence describes your question, OP. Using the gryphon outside its intended area with the higher flying speed is considered a bug abuse and thus this act would be punished, if it gets investigated by a GM.
