Since you are asking for some spec or class, I assume you want profs for utility/stats.
What you do is max out blacksmithing, mine reagents/farm gold, drop mining and pick engineering as your second profession.
Nice stats boost from blacksmithing with extra sockets and real nice enchants/tools from engineering.
Jewelcrafting gives you additional 63 stamina.
Leatherworking gives 62.
Quite necro, but go for
1. Leatherworking + Engineering (Stamina/Resistances swap + Armor boost)
2. Leatherworking + Jewelcrafting (Stamina/Resistances swap + Highest stamina boost from all professions)
Armor and resistances for resisting spells time to time are priority over pure stamina, because even 3% more damage reduction from all physical damage is better than x-5k hp fully buffed inside icc. Easier for your healers too
