You can change from non-heroic to heroic on a per boss basis and even change freely between attempts.

Only restriction is: For LK to be heroic you have to clear quarterbosses on heroic. Otherwise you can only do him regularly.

They offer a challenge with greater difficulty, yet I still think that the more the game is modified, the more it loses its nature.

I know what kind of server Lordaeron is, mine is just an opinion.
