Maybe max all 5 proffesions to 300 skill, farm some achievments if you're achievment hunter, if none of that, you can always level your alt m8!
Farm gold for dual spec, farm gold for fly mount in OL, maxout professions , roll an alt, go get some achivments, make 60 lv raids

don't get mad for farm golds… when tbc contents come out u will get enough from questing and daily quests to purchase fly mount. apart maxing profession and do old school raids there is nothing to do so if use not interest in something particular take a break from wow and wait 1st november for tbc release.
