I have jewelcrafting and I want to learn mining alongside it. I have fishing learned and I read online that you can have as many secondary professions as you want, but it wont let me learn it.

Mining isn't a secondary profession - it's a primary one and from your screenshot you have jewelcrafting + tailoring learned already. That's 2/2.
Secondary professions are first aid, fishing, cooking.
