I use the "Census+" addon to look, how the statisitics of classes on Sargeras is. For now I've counted more then 5.000 toons on Horde side. On the Ally side I'd counted to less (round at 1.200 toons) to show relevant statistics. But I try to gather more data for the Alliance next days.
Horde:
Counted toons: 5197
Druids: 10% - 51% Tauren, 48% Trolls
Hunters: 13% - 34% Troll, 28% Bloodelfes, 15% Orcs, 8% Goblins and Undead, 5% Tauren
Mages: 8% - 39% Bloodelfes, 28% Undead, 14% Trolls, 13% Goblins, 4% Orcs
Priests: 7% - 37% Bloodelfes, 34% Undead, 12% Trolls, 9% Goblins, 5% Tauren
Rogues: 8% - 35% Bloodelfes, 28% Undead, 14% Goblins, 13% Trolls, 8% Orcs
Warlocks: 6% - 33% Bloodelfes, 30% Undead, 15% Orcs, 10% Trolls, 9% Goblins
Warriors: 12% - 37% Orcs, 22% Bloodelfes, 20% Tauren, 9% Undead, 5% Goblins, 4% Trolls
Paladins: 13% - 66% Bloodelfes, 34% Tauren
Shamans: 7% - 32% Orcs, 27% Trolls, 24% Tauren, 15% Goblins
Deathknights: 10% - 39% Bloodelfes, 20% Orcs, 16% Tauren, 11% Undead, 8% Goblins, 2% Trolls
Orcs: 13% - Most popular class: Warrior, 34%, Shaman 17%
Tauren: 17% - Most popular class: Druid, 31%, Paladin 26%
Trolls: 16% - Most popular class: Druid 32%, Hunter 28%
Undead: 13% - Most popular class: Priest 20%, Rogue 19%, Mage 18%
Bloodelfes: 31% - Most popular class: Paladin 28% (all other less as 14%)
Goblins: 8% - Most popular classes: Rogue 16%, Mage 15%, Hunter & Shaman 14%
On Ally side it's a little bit different at class-distribution, but with 37% humans and 22% worgen there are round at 60% of toons splitted to 2 races. If I have more then 5.000 toons counted, I'll show you the Alliance statistics.

But this are data from overall (1-85). Next days I make one for lvl 85 only - together with the Alliance statistics, if I get enough data from their side.
But I'd seen, that the distribution of classes at the allyside is different to the hordeside. But: More soon. :)

I counted now 511 lvl 85 toons at the Alliance. 43% of this are humans. 15% of all lvl 85 toons are deathknights, warriors and paladins (81, 80 and 79 toons).
From all human toons are: 28% paladins, 17% warriors and 15% deathknights.
At Horde (1637 counted lvl 85 toons) the most played classes are these 3 too: 15% paladin, 14% deathknight and 12% warriors. But the most played class (bloodelfes) have here only 33%.
So you can't say, that the alliance play harder classes. ;) It's just so, that humans have a better PvP-racial and don't need a medaillon so they can use another trinket.
I'll try to make some graphics these days to show the differences between both fractions. :)

It would be very interesting if you could break it down by male or female toons. I'm curious what % of the blood elves are female lol.

It's not possible to split it in genders. But I think, that ~2/3 of bloodelves are female chars.

Hehe, the most played race are Humans. ^^ But nearly half of Alliance players plays them, and just round at a third of Horde players play Bloodelfes. So I think - if I look at the statistics - that at the Horde we find more plurality.
I play mostly Tauren (all classes who can be played as Tauren I do play Tauren :D) and at the other classes (like Mage or Rogue) I play (female) Bloodelf.
When I play Alliance, I mostly choose Dwarfs and Gnomes. :D

I gathered some new data, so the statistics for the Alliance will be more precise.
As we see, Warlocks, Shamans and Rogues are the most unpopular classes at both factions. The most popular classes are Warriors, Paladins and Deathknights at both factions.
The most unpopular races are Gnomes, Dwarfs and Nightelfes at the Alliance, and Goblins at the Horde. These races are played from less then 10% of a faction. The most favored races by far are Humans (45%) and Bloodelfes (32%).
