Which is the best WOTLK server for Horde, also, whats the content like, all the dungeons 1-80 in the game? and is it just POS farms till you get TOC gear or are NAX and Ulduar raided for gear often?

Well you can't really say which realm is best for horde or ally, but you can check the recruitment threads, but still there's more ally guilds that do end-game raids than horde.
All dungerons are working, but it's less likely to get into one pre-60 as the xp rate is 7 and people are just doing quests for fast grind.
ToC is raided often unlike Naxx (they raid it only for achievements), but im pretty sure if you try to host it people would join.
