BC vs WOTLK proffesions fun

hi, im thinking about joining Outland( im Icecrown player). I play WoW mainly because of proffesions - i like geting new recipes, finding and collecting mats and than playing auction house with products i make. So my question is - are proffesions more fun on BC? Is there more variety of items and VIABLE ores/ herbs than in WOTLK?

recipies usually consist of much more mats compared to wrath, and it's overall harder to level in bc
