If i use the FACTION CHANGE option for my Tauren Priest from horde to ally, i will be able to choose my race and have the same items?

Yes, you will be able to chose the new race and yes, you will keep all the items, though some items that are horde only will be converted to their alliance counterparts. (Medallion of the Alliance > Medallion of the Horde)

It shouldn't be a problem and after log in the game you can choose a new race, appearance and name for your new ally char.
1. note: Don't approve too early. Some of my friends confirmed the faction change too fast and had a wrong name/char after because they weren't careful
2. note: Items are sometimes bugged after faction change. (for example leather shoes are mail shoes after, you can't wear them as druid after)

by approve what do you mean? approving to switching to alliance?
regarding the bugged items, i supposed the GM or the responsible will solve all the problems, am I correct? :D

Here 2 experiences: One friend did the faction change in acc panel and chose the wrong char there. He approved it and saw after the 30 coins were away that he didn't select the hunter but a mage.
The other friend did an excellent job and logged in the game where you can see your chars. He select the char, chose a new name and appearance, and after he approved it, the char were created by a wrong colour and a letter was missing in the name. It wasn't a bug; my friend was too fast and didn't see that he made mistakes.
I can't say if gms can refund this kind of bugged items, because some sources say yes and some no. It's a bit weird. I had a similar case and got more or less this answer:
GMs are not allowed to give a player ANY item under ANY circumstances. Refund not possible. Report bugs in the bugtracker.
Most of the items aren't bugged after faction change, don't worry. It's maybe 1 item, often concerns leather shoes;)
