I was looking around the forums and didn't find a dueling etiquette post, so i decided to share my thoughts here from my experience playing on the blizzard servers.
Obviously since its a duel you can do whatever you would like. however, on the Blizzard servers there has always been an unwritten rule about dueling, this is to promote fair and competitive gameplay where each player must outplay the other to win, only through the use of the cooldowns available to their class.
That rule is:
"anything you cannot use in arena, you cannot use in a duel, and said duel should be treated as a 1v1 arena match."
This etiquette is most suited to dps spec vs dps spec duels, healer vs dps has not been considered in this post. Mounting up to a flying mount is considered to be bad etiquette. giving an unfair advantage to long cc users using the cc and then flying away to wait for cooldowns. Other bad etiquette practices include certain cooldowns as well as profession bonuses, they are explained as follows.
Professions
These are advantages any class can acquire by spending gold to level up a profession.
Any engineering belt enchant is not allowed in a duel as these are not allowed in an arena match. however, use of engineering on use gloves enchant is allowed, as this is allowed in an arena match. The same goes for any item that would give the player an unfair advantage in a specific situation such as any invulnerability item or cc etc.
Class Cooldowns
These are the abilities each class has unique to them.
Hunter - Stampede, since this ability does not get its 75 percent reduction on pet damage outside arena it is often considered bad etiquette to use this in a duel
Priest - void shift - since this ability gives you your full health pool back. it is considered unfair to use, as being a 10 minuet cooldown and unusable in a 1v1 arena.
Monk - Monks to not have any cooldowns that would be considered unfair on blizzard servers.
Mage - Timewarp - this is a 10 minute cooldown and is therefore unusable in arena, the same goes for the Shammans Bloodlust ability.
Paladin - Lay On Hands - this is a 10 minute cooldown, it would have a similar effect as void shift and therefore is considered unfair.
Warrior - Warriors do not have any cooldowns that are considered unfair on the blizzard servers.
Warlock - Demonic Gateway is allowed to be used, however it must be used when the duel has started, this would simulate an arena start and the warlock setting up his gateway. which is interruptable by the opposing player. the warlock can choose to get a fear off then cast the gateway.
Death Knight - army of the dead- this is a 10 minute cooldown, it is considered very unfair if the Death Knight were to use this before the duel started.
Rogue - No cooldown from the rogue class was thought of to be unfair. however the rogue playstyle of vanishing and waiting for cooldowns to come back is considered very rude on blizzard servers.
Druid - Symbiosis, this ability is not possible when in a 1v1 arena match, most of the cooldowns acquired by the druid through symbiosis are considered unfair, such as dispersion etc. druids are more than well equipped to kill any other class if played effectively and do not need an extra advantage that would ruin the competitiveness of the duel.
Shamman - Bloodlust is the same as Timewarp and is a 10 minute cooldown, thus not considered fair in duels.

I agree with everything except druids symbio... but that is because i am a resto dudu. :P and on mop servers symbio doesn't cancel when out of rang/group lol
Complaining about lag, bugs or accusing the opponent's class/spec of being OP when you lose the duel.
#1 scumbag and annoying thing to do, IMO.
Personally, I encourage people I duel against to use everything they have.
Same. If they were not intended to be used in duels then they would be disabled in duels. Duels are just limited area wpvp with a single player of any faction. If your counter class or someone who uses an ability you don't like wants to duel, and you don't think you can beat them if they use it, then just decline.
I think it is weird that you have to tell people that eating and using potions in duels isn't cool and then they get all confused. What is the point of even dueling if you are going to use whatever consumables or unfair engineering advantages? You aren't going to gain anything from doing that.
