WotLK Item vs Item - pre naxx raid gear

Hello. I recently checked a gear guide for wotlk rogue riding and today when I was looking through AH I found an item that has a lot better stats in my opinion than in the gear guide. Can you tell me why it's not there, instead there is some other one?

AH item has around 2x more agility so more % crit, a bit lower attack power and gives critical, but the guide adds more expertise rating. I'm new to WoW and never raided so I want to understand the thing with stat caps and other small things that are important.

Reaching your hit and expertise caps is highest dps boost for pve. Other stats come after that. (helmet you found on AH would be better for pvp, since resilience)

get 17% spell hit - you have some from talents (5%?) and some from debuffs (3%) from your raid, rest has to come from gear
and at least 20 expertise (cap should be 26, but it's likely still bugged and therefore a bit lower - get more if you see dodges/parries)

Notice that the AH head doesn't have any gem sockets. Gems add a good bonus to an item's stats. There is also a meta gem socket, which adds even a greater boost in stats.

Now I understand, but what is this meta socket? I checked on WoW wiki and I cant understand what gems I can put there?

Ohh, ok. I recently looked at all the stats, gems etc and checked all BiS items for rogue from this article - http://warmane-guides-and-updates.bl...uide-335a.html

So, what I noticed that T10 tier has nothing, but one 106 expertise bonus and totally 272 hit rating. 90% of the items have red sockets so if I am right I need to place three http://wotlk.openwow.com/item=40118 and three http://wotlk.openwow.com/item=40003 so I can have a perfect 214 expertise cap and two http://wotlk.openwow.com/item=40125 for near perfect hit rating cap. Am I right?

Also my second question is about this http://wotlk.openwow.com/itemset=813 set, which is crafted pvp set if I'm right. So how I can get more hit rating for 5% lvl cap that I read in this guide http://forum.warmane.com/showthread.php?t=101498
