Howdy! Trying to find the right server to call "home"

I do like having more then 1 server, gives me options if i get bored. But i was wondering what each of the servers were. There seems to be 4 of them, but no information about how they differ. I have seemed to find the PVP server, so i will be in there for the moment but what about the rest?

And how is PvP on blackrock? Im mostly looking for a place to get my PvP on, but it does get boring after a bit if theres nothing to grind for.

Edit: New questions for blackrock. Professions, do i have to manually level them? I picked them up but they are 1/450
I tried picking up gathering professions to farm mats, but they seemed to not be there. Very confused on that to do here lol.
