WotLK I don't seem to have access to certain quests that others do without any issues

So here's a strange issue I have been having recently. I can't accept or even see some quests but I see other players doing them. One such example is Amberseeds quests in Grizzly Hills. When I got there I couldn't interact with the amberseeds in the bucket but others were able to do it. I had similar issues in other zones too and I just can't figure out why. Could it be that my WoW folder is corrupted or something? I am using the "old" WotLK client available for download on this site.

To add on this, in the same area I was able to take "Thane of Voldrune" quest immediately from the quest giver. Normally he is supposed to give me two pre-requisite quests to fight huscarls and flamebinders first but I didn't have those quests available at all. How...? I did this stuff several times before on other characters without any issues, what's happening? Is it new server bugs or just something wrong on my end?

I also noticed that some quest items that are supposed to be out there in the world just aren't there at all. Like, the saronite ore in Pit of Azjol-Nerub for the Horde side quests, there's 0 of them at all. Same with northern salmon for Hugh Glass' quest to feed his bear, there's 0 fish in any of the water areas.
