What server should I pick, I mainly enjoy wpvp and like to defend world defense alerts as my end game. Can anyone suggest what server I should pick? I'll be starting fresh also.

Icecrown and Onyxia seems more adequate to what you are looking for. Icecrown is a full-fledged WotLK realm while Onyxia follows a progressive schedule that started with vanilla up until the last Lich King patch and still is on the mid-road for that point.
