I went to reroll a deathknight on my 74 dwarf hunter Lanius and wanted to use the same name, so i deleted the character before i made the deathknight. i didn't realize I needed a lvl 55+ before and now i can't create the deathknight because of this restriction. i want to be able to roll the deathknight, not necessarily restore the 74 hunter.

Try to restore your hunter via the restore function, if you can't restore him there isn't anything to be done about it.
My account > Realm > Toon > Points/Coins > Character restoration

i looked into that, and the character has to be at least level 75. mine was 74.
they can't do something to the account to remove the 55+ restriction on deathknight? or put a bare level 55 character so i can create a deathknight?

nope. if your playing on any realm other than lord you can donate and create a dk without the lvl 55 requirement, otherwise have fun releveling.
