I have a Paladin level 80 and I want to use it to boost my alt "a Warlock level 1" using dungeons.
How can I do it so my Warlock can gain all the mobs XP alone in the dungeons please ?

You are asking other people to teach you how to cheat? Powerleveling where your warlock gets all the experience is an exploit and most likely bannable, just so you know. :)
I can tell you this tho, you need to be level 10 before you can enter any dungeon.

So how people asking in /global for level 80s to boost them in dungeons ? How does it work please.

One more question please. The moment I throw the dynamite on the mobs they will one shot the warlock before I can aggro them again with my paladin :s
What's the solution ?

Throw from max range, look at the dynamite animation and practice the timing

Yup, mob-tag-boosting is an exploit, it was fixed at a later patch by blizzard too and yes you can get banned for it, there is few topics where people claim they have been banned for it. I don't think there is a high risk of being banned, most likely tag-boosting is so common that it would be too big of a task to monitor it, but it is without a doubt an exploit and exploiting is cheating.
Boosting is a whole other thing, that is where the players in group get reduced experience (because they have a high level character in their group) and not the full experience.
