How to gem?

http://wotlk.openwow.com/npc=32172 does not sell rare gems anymore. since we upgraded to 3.1, aka ulduar. Question - why? As i remember, that rare gems must be replaced with epic ones, in 3.2 (aka ToC).
So what is going on?

Alot of jewelcrafters have done icy prism (gives random blue uncut gem) every day so they probably have lots stacked up, so you can either let them craft one for you for a price or check AH for already cut gems. Third option is to get saronite ore and let a JC prospect it for uncut gems.
