hi,
since i've arrived in stranglethorn, im getting ganked basically every 10 minutes. My problem is, that they are 10-15 level ahead of me, or they are just 3 or 4 ppl so that theres basically no chance for me. I dont mind fighting for a questing area and losing in a fair 1v1 with maybe a level difference of 5, but thats just unfair bull****. Any tips for me?

What realm? And if you go to stranglethorn at lvl 30 you have super high chances to meet 35 45 level players even a 50 who knows,
This is mostly high rated servers,because quests give lots of exp.

Lordaeron. As i said, i do not dislike pvp, but getting spawncamped from ppl that are 10 or 15 level higher or simply more than me is kinda....

Stranglethorn has always been pvp-ish. if you don't like (pvp) people go to Desolace :p

STV is notorious for having a **** ton of pvp since its a zone thats good for leveling for 30-45ish so you really can't avoid it. Chances are however that someone on your faction of a super high level is in the zone (at least on Lorderon I saw a lot of ??lvl players running around). Try to get ahold of them via general chat and see if they can't scare the gankers off. Barring that, join a guild that is willing to come help you out if needed.
I'm also someone who would prefer to play on a PvE server but I've found that being non-hostile to the opposing faction (not running in and stealing their kills, helping them kill the mob they're on, doing the /wave command, etc.) generally results in friendly behavior.

Why are the realms down and for how long?

Pretty much this. It's a good leveling zone for both factions so if you want to avoid PvP you should choose another zone e.g.:
30-40 Alterac Mountains
30-40 Arathi Highlands
30-40 Desolace
35-45 Dustwallow Marsh
