If you could have any class in full BiS PvP or PvE

What would you go for and why?

Nothing. Having BIS is kind of the end goal of the game. Accomplishing that kind of finishes the game, there's really not much left to do after that.

PvE, I'd guess, because you can get starter PvP gear for emblems, but you can't get starter PvE gear for honor/arena points.

*I hate gearing part myself, I play for raiding/bgs and gearing is the most annoying part to me, so I prefer to skip it as much as possible*

PvE, obviously. I can do PvP in PvE gear and still be successful, but not vice versa.
